SWISS ROLL CAKE 90 KCAL PER SLICE

Mix 1 package of LQ Vanilla Muffin Mix according to the instructions on the package.


Spread the batter evenly onto a baking sheet lined with parchment paper. Bake at 175°C (350°F) for 15–20 minutes.


While it’s baking, prepare the jam (or use store-bought jam).


Bring 170 g frozen strawberry pieces35 g sugar, and 100 ml water to a boil and simmer for 10 minutes. While the strawberries are cooking, soak 2 gelatin sheets in cold water.


After 10 minutes, add the softened gelatin sheets to the strawberry mixture and let it cook for another 4–5 minutes, stirring until combined. Allow the jam to cool.


Spread the cooled jam over the cake base and carefully roll it up into a Swiss roll.

Cut into 16 slices and enjoy! 🍓✨

 

CHOCOLATE RASPBERRY CAKE 133KCAL PER SLICE

Mix one package of LQ Chocolate Muffin Mix according to the instructions on the package.

Pour the batter into a cake pan and bake at 180°C (356°F) for 25–30 minutes. Let it cool completely.

Mix 13 g powdered sugar with 200 g Lindahls raspberry & chocolate quark (if you don’t live in Sweden, try to find a raspberry-flavored quark instead).

Slice the cake in half and fill it with the quark mixture.

APPLE CAKE WITH VANILLA ICE CREAM

163 KCAL INCLUDING THE ICE CREAM

Use LQ Apple Cinnamon muffin mix and follow the instructions on the package.

Line the bottom of a loaf pan with baking paper and pour in the batter.

Bake at 180°C (356°F) for 20 minutes without foil, then bake for another 10 minutes with foil.

Let it cool completely, then cut into 12 pieces. Serve with 30 g Sia vanilla ice cream (50% less sugar).

 

CARROT CAKE 137KCAL PER SLICE 

Take an LQ Apple Cinnamon muffin mix and sift out the apple pieces. You can use these for your muesli, for example. Grate one carrot and add it to the mix together with 2 tbsp rapeseed oil and 2.5 dl water. Mix well.

Pour the batter into a cake tin and bake at 180°C (356°F) for 20–25 minutes. Let the cake cool completely.

Mix 200 g Philadelphia Light with 25 g sweetener, or adjust the amount of sweetener to taste. Spread the cream cheese mixture over the cake and garnish with lime zest.

Cut the cake into 12 slices to get 137 kcal per slice.
